Delicious VEGAN Pumpkin Muffins

It's that time of year again when we can dust off our fall decorations, bring out our cinnamon scented candles, and start using pumpkin in everything!!

As a mom of a child with severe food allergies I dread all the holiday baking and treats because there are some of those delicious delectables that just cannot be recreated to be egg and dairy free. So, when I come across a recipe that I LOVE I want to share it with you in the hopes that it will help someone else with food allergies... or who is choosing to avoid eggs and dairy... to have some holiday fun!




Although my son has a peanut allergy he is NOT allergic to tree nuts (that we know of) so I choose to use almond milk in all of my baking recipes. If you cannot have nuts please substitute with your favorite milk.


These muffins are perfect for breakfast or for dessert. They are soft, moist, and oh so good!!!

Ingredients:
• 1 - 15 oz can pumpkin puree
• 3 tsp vanilla
• 3/4 c Almond Milk (or milk of your choice)
• 3/4 c olive oil
• 3/4 c granulated sugar
• 3/4 c brown sugar
-----
• 3 c all-purpose flour
• 1 1/2 Tbsp baking powder
• 3/4 tsp salt
• 3 tsp cinnamon
• 1 tsp ginger (heaping)

Directions:
1. Preheat oven to 375º F.
2. Mix all wet ingredients and sugars in a medium bowl.
3. In a separate bowl, combine all dry ingredients. Stir into wet ingredients (no need for an electic mixer).
4. Scoop batter in to lined muffin tins (or spray your muffin tins and you don't need liners).
5. Bake for 16-20 minutes or until a toothpick inserted comes out clean.
6. Serve warm or store in an airtight container.

Optional Serving Suggestions:
• Serve topped with a drizzle of maple syrup.
• Serve topped with drizzled glaze made out of water and powdered sugar.
• Top with whipped cream or a side of vanilla ice cream.
• Drizzle with caramel and sprinkle on some toasted nuts.
