Recipe: Muffin Crumb Topping (dairy-free alternative)

Muffins for breakfast are great! But why not make then even greater!?!? This muffin topping is the perfect addition to any muffin recipe. Honest! One try and you will never eat a plain muffin again!!!! 



I make mine dairy-free due to allergies in our home, and it is just as good as the original recipe. I promise! 


Crumb Topping Recipe:

1 cup flour
3/4 cup brown sugar
1/3 cup granulated sugar
1/4 tsp salt
1/4 tsp cinnamon
1 stick butter (or dairy-free margarine)
1/2 cup quick cooking rolled oats

DO NOT MELT THE BUTTER. Cut the bold butter into small squares. Combine all ingredients using gloved hands or a pasty blender. Mix together until it forms crumbly pieces (clumps) that are about the size of a pea. Top the muffins before baking. Extra mix can be stored in a zip top bag or sealed container for a month. 


That's all... super easy, and really, really, delicious!!!
