Super Easy Fried Rice

I don't know about you, but I LOVE Chinese food, but don't really care for take out... so I make my own. Here is my favorite recipe for Fried Rice. The best part about it is that you can pretty much use whatever you want... and whatever you have on had (frozen or fresh!)

Ingredients:
2 cups uncooked rice
1 cup frozen corn
1 cup vegetable stir fry mix (frozen or fresh)
1/8 cup your favorite teriyaki sauce
1 T extra virgin olive oil
Optional:
1/2 cup ham (cubed) - or chicken (cooked)
1 scrambled egg
1/4 cup diced red onion
1/4 c roasted peanuts or cashews
Start by cooking your rice in the rice cooker (don't you just love those!!!)

I wait until my rice is just about done, then I heat up a large skillet and add the olive oil and my ham and onions. Saute until ham is lightly browned and onions are mostly clear.

Next, add the frozen corn and other desired veggies. I happened to have a fresh stir fry mix with broccoli, snow peas, and carrot medalions. I cut the carrots and broccoli because they were HUGE. Stir everything together in your skillet and let it saute until veggies soften.

Once veggies are done, add scrambled eggs (if desired -- prescrambled -- I've tried before to scramble in the same skillet while the other stuff was cooking... sometimes it works, sometimes it doesn't... but it can be done if you forget!)

At this point I like to add my teriyaki sauce to give all the veggies and meat a good coating. Then add your rice (that has by now finished cooking). Stir everything together and serve. Add more teriyaki sauce if desired!

The great thing is that you can just use whatever you have and it will turn out delicious! Frozen or fresh... doesn't matter. And here's the best part....

My little helper loves to nibble on the ingredients! So, she gets an extra dose of broccoli!

Another great thing about this recipe for my family, is that it is egg free and milk free! My son (18mos.) has severe milk, eggs, and peanut allergies. I made my fried rice egg free as well so that he could try some. He didn't eat much, but the fact that I can make a yummy meal that he can eat it HUGE at my house!!! You can of course add the egg and peanuts to yours though... it tastes super delicious!!!

(Don't mind my hubby on the couch behind... he's been sick this week... poor guy)
