This recipe is an adaptation from a delicious recipe I got from a friend when my husband and I were newlyweds. I had never heard of no bake cookies until then... I must have been living under a rock or something.... but one try and I was hooked! So, I took that recipe and have adapted it so that it's safe for my little guy (and my family) to eat.

Ingredients:
- 1/2 cup dairy free butter (we use Earth Balance Vegan Butter)
- 1/3 cup cocoa powder
- 1/2 cup dairy free milk (we use almond)
- 1/2 cup Sunbutter (or nut butter of your choice)
- 3 1/4 cups oats
- pinch of salt
Directions:
- Start by adding cocoa powder, milk, butter, and sugar to a medium sized saucepan. Slowly bring that to a boil and let it boil for 1-2 minutes -- until well combined.
- Add in the Sunbutter and oats. Stir completely.
- Line a brownie pan with parchment paper. Spoon mixture onto brownie pan and smooth out with the back of a spatula.
- Place pan in the refrigerator for about 30 minutes until the mixture is solid. Cut and enjoy!
*You will want to keep the cookies cool or they will start to melt. They still taste just as good... they're just a little messy this way.
To make individual cookies instead of pan cookies, simple drop spoonfuls of your mixture onto a parchment lined baking sheet. Place your baking sheet(s) in the refrigerator until the cookies are firm
Store any extras in an airtight container in the fridge.... if you have any extras!
You can add in optional goodies like coconut, crushed nuts, dried berries, or anything else that you think sounds yummy! We tend to keep it pretty simple though and stick to the original recipe. When you find something this good, why change it? ♥
