{ Dairy- Free, Egg-Free Chocolate Cake Recipe - Simply DELICIOUS!! }

Last weekend was my daughter's 4th birthday! I was hunting around for a chocolate cake recipe {her favorite} that my son could eat. I found this delicious recipe here on the Organizing Junkie website! I substituted regular flour for the gluten-free flour combo in her recipe since we don't have to eat Gluten-free!

Ingredients:
 • 3 cups flour
• 2 cups granulated sugar
• 2 cups cold water
• 2/3 cup vegetable oil
• 1/2 c. cocoa powder
• 2 tsp baking soda
• 2 tsp white vinegar
• 1 tsp salt
• 1 tsp. vanilla

Directions:
• Preheat oven to 350F
• Combine all ingredients and mix on high until well combined. {I let mine keep mixing in my kitchen-aid until it's light and fluffy!}
• Pour into a greased 9"x13"x2" pan.
• Bake for 30 mins. {or until an inserted toothpick comes out clean!}

I have also made these as mini-cupcakes. I lowered the temperature to 300F {so the bottoms don't burn} and cooked them for about 10-12 minutes!}



The cake is moist, light, chocolaty... and oh so delicious!! You won't be able to have just 1 slice!

Laura, from the Organizing Junkie, also give a recipe in that post for gluten-free, dairy-free frosting. I have found a brand of chocolate frosting {Pillsbury - Fun-fetti} that is dairy-free so that is what I use on my cakes! It is super delicious on cupcakes if you put it in your kitchen-aid {or use your beaters} and set it at a med-high whipping setting. It adds some air to the frosting mix making it super light and fluffy!
